Bonfire Night is one of our favourite times of year at UKMUMS.TV – though most of the team will be staying indoors this year looking after our four-legged friends. But that’s not to say that we can’t still enjoy this fun time of the year. After all, there is so much to enjoy beyond the fireworks – not least the food! So, we’ve put together some of our favourite recipes that will warm your belly and prepare you for the night ahead!
Mains
Catherine wheel toad-in-the-hole with honey & mustard onions
Toad-in-the-hole is always a crowd pleaser, so you can’t go wrong with this amazing recipe courtesy of BBC Good Food. Using linked sausages or one large coiled sausage, this recipe puts a spin on the traditional toad-in-the-hole, quite literally with its Catherine wheel design. While this looks like a complex dish, it’s fairly easy to make and serves four. If you have time to spare, why not serve this toad-in-the-hole with fluffy roast potatoes or mash and veggies?
Pumpkin, chickpea & coconut curry
With pumpkins readily available, this warming curry recipe from Jamie Oliver is a brilliant choice for Bonfire Night. It’s super hearty and packed full of goodness! Oh, and it’s super easy, too – win!
Phil Vickery’s Bonfire Chilli Three Ways
And here’s another dish that’ll warm your cockles! Bursting with smoky flavours, Phil Vickery’s Bonfire Chilli is a real treat for Bonfire Night. And the best bit is that he suggests three different ways to serve the dish: Sloppy Guiseppe style, as a Mexican Feast, or on top of Jacket Potatoes!
Dessert
Cookie Base Classic S’mores
If you don’t know what s’mores are, they are a yummy (and rather gooey) American treat, typically made from graham crackers, chocolate bars and marshmellows. S’mores are traditionally cooked over a campfire, but they can be made at home in an oven or microwave. This recipe from BBC Good Food uses cookies rather than graham crackers to sandwich the marshmallows and chocolate spread together, making for a naughty and indulgent Bonfire Night treat.
There are many variations of this recipe on BBC Good Food, from Banoffee and pumpkin pie s’mores to margherita s’mores, all of which will tickle your palate! Or, if you’re pushed for time, you can always cheat with a s’mores dip, like this one from Tesco Real Food, and a packet of digestive biscuits!
Parkin
Parkin is a traditional sponge cake from Northern England and is flavoured with syrupy molasses, oatmeal and ginger, just the thing to get the taste buds going on what will be a chilly evening! BBC Good Food has the perfect recipe here.
