Moving into May means we can start looking forward to the great British summer! With April showers (hopefully) over and the sun coming out a little more often we start to see a lot more greenery available in the shops. Ellie from Ellie’s Kitchen UK is looking forward to the start of salad season and with tomatoes, spring onions and rocket all at their best you are sure to have top ingredients to work with.
Here are a few of Ellie’s favourites:
Peas – May sees the rise of the humble pea. Peas are loved throughout the UK but we often don’t use them as widely as we should. Don’t stick to just having peas with your fish and chips or with your lamb chops, try them raw in salads or as a sweet burst of freshness in a creamy risotto.
Broad beans – Often overlooked due to being a little more high maintenance broad beans go side by side with peas. Another great addition to risottos and salads too.
Tomatoes – British Tomato Week runs in May so what better time to celebrate the variety and range of tomatoes on offer! Bring out the fresh flavour of tommies with salt and olive oil and don’t forget to pop some cherry tomatoes in the little one’s lunch boxes!
Asparagus – Back in March we saw the first spears of asparagus appearing but during May asparagus is sweet and tender; it’s the perfect time to eat it. Kids a little unsure? Chop spears up small and mix into pasta bakes and spaghetti sauces.
