This fabulous coronation recipe comes from Humdingers. A London based catering company that began with a vision to bring unpretentious but delicious food to as many people as possible.
As well as a catering company, they also run Humdingers Bakery & Soup Kitchen.A social enterprise that launched during the pandemic. Humdingers struggled immensely when Covid hit in March 2020. But despite the negative effects the pandemic had on their business, they used their profits to open a soup kitchen to feed the local community.
In 2020, founder Robert was awarded a British Empire Medal by the Queen for his work to provide food for people in his community.
Given the backstory, we think this recipe is most definitely fit for a king!
Coronation White Chocolate Cheesecake Recipe
This is the perfect recipe to make for the coronation… although — to be honest — we think it would be equally perfect for a summer picnic or barbecue. It might even give our favourite Eton Mess recipe a run for its money!!
As well as blueberries and raspberries (or strawberries), you can even scatter edible flowers over the top of the Coronation White Chocolate Cheesecake, to really finish it off.
We like apple blossom or violas — both of which are edible.
Coronation White Chocolate Cheesecake
Equipment
- 1 8-inch spring form tin
- Piping bag
- Perspex bowl
Ingredients
For The Base
- 200 g digestive biscuits
- 100 g unsalted butter
Cream Filling
- 300g WhiteChocolate
- 450g Cream Cheese
- 450g Double Cream
- 1.5 tsp Vanilla Essence
To Decorate
- Blueberries
- Raspberries, Strawberries (or both!)
- 50g Double cream, whipped and put into piping bag
Instructions
- Crush the digestive biscuits and after melting the butter, mix until a breadcrumb consistency before pressing into the base of a lined 8-inch spring form tin.
- Melt the white chocolate using a Perspex bowl and hot water beneath or in the microwave.
- In a separate bowl, beat the cream cheese into a smooth and creamy consistency.
- In another bowl, semi-whip the double cream into soft peaks.
- Fold the white chocolate into the cream cheese, then fold in the cream followed by the vanilla essence. You can also fold in some chopped up raspberries to add a fruity texture.
- Gently spoon the mixture on top of the biscuit base and spread evenly to even out the top.
- Put into for a minimum of 8 hours, ideally overnight.
- Once set, carefully remove from the tin and place onto a serving plate or disk and use the piping bag and fruit to create a union jack on the face of the cheesecake.
