Hello everyone, welcome to April! Ellie from Ellie’s Kitchen is on hand once again to tell you what ingredients are at their very best this month. This month’s in season ingredients peak and drop fairly quickly so make the most of them while you can!
Morel Mushrooms – Probably one of the most sought after wild mushrooms (and the most expensive!). Morels are only usually around until May so snap them up fast! Perfect on toast or with a shed load of garlic as a tart filling, we just can’t get enough of these!
Watercress – Packed full of peppery punch watercress is the perfect way to pep up spring plates. A member of the cruciferous family with mustard greens and horseradish as relatives this sneaky green makes a great addition to stir-fry’s and soup. It’s also great to wilt into dishes, such as spag bowls and curry, as a hidden portion of veg!
Jersey Royal Potatoes – Okay, so we don’t need to tell you how to use a potato but it’s worth noting that Jersey Royals are at their best right now. So why not try making your Easter Sunday roasties with these? Keep the skin on, part boil and then roast them with salt, pepper and crushed garlic cloves. YUM!
